TACO (cookie) TUESDAY!

If you’re anything like me, (which lets be honest, if you’re still following my page after all of the inappropriate cookies I have posted, you are probably a lot like me), then you can get DOWN on some tacos any day of the week, Tuesday just makes it sound cute and not like I’m stuffing my face on a regular basis…

Moving right along. These Taco Cookies are made out of a DELICIOUS soft, sugar cookie. Filled with buttercream frosting. It’s not April fools but I think your family will be thrilled when you serve them a taco cookie after a taco dinner. I will post the sugar cookie recipe below, but it would work with your favorite sugar cookie recipe, just dye it yellow! For the buttercream frosting, we use American Buttercream, mostly because it tastes the best. Fight me. You can download ours HERE.

However, this will totally work with any recipe you love to use, or even store bought if you’re a domestic goddess.

Now, I do have to preface this with, this is what we call a “drop” cookie recipe. SO yes, it is a sugar cookie, but it is not the kind you will want to use to roll and cut, it doesn’t hold its shape well. So while it is perfect for this use, and your traditional round cookies, don’t cry to me that it doesn’t hold up when you rolled and cut it out OKAY!? I know one of you is going to do it.. and that is why I love you.

 

 

 

 

 

 

 

 

Sugar Cookie Recipe :

1 lb butter

1 Cup Brown sugar

1 1/2 Cup white sugar

2 egg yolks

2 eggs

2 tsp baking soda

2 tsp cream of tartar

1 tsp salt

5 1/2 Cups All purpose flour ((Substitute your favorite gluten free flour blend for a Gluten free Cookie! Here is one of our favorites))

yellow food coloring (we use americolor)

 

For the SUGAR COATING:

1 Cup White sugar

1 TBSP black sugar (find it here)

 

 

HOW TO MAKE THESE BAD BOYS:

1. Cream Butter until smooth

2. beat in sugar and brown sugar until smooth.

3. Add eggs, 1 at a time

4. Add vanilla

5. Stir together Dry ingredients (flour, baking soda, salt, cream of tartar). Gradually add to butter mixture until JUST combined. (if you’ve ever heard of a TOUGH cookie, it’s because you over beat it at this stage)

6. Add in yellow food coloring until desired “taco shell” color is reached. follow your heart.

7. Stir together white and black sugar

8. Using a large scoop, scoop the dough and roll in the sugar mixture. Place on cookie sheet. Bake at 350 for 7 minutes, rotate, then 7 minutes more. ((Baking times may vary depending on how large or small you scoop these cookies – bakery style they are extra large, but I think we can all agree, if the cookie ain’t raw, it is over done.. haha but seriously)) <3

9. Follow the steps in the decorating video Below! (dye your buttercream the colors of the taco filling, you can use all round tips, no tips, or a flat rose tip for the lettuce!)
